Bread upma
Bread upma is the smart way to use up leftover bread. The cubes soak up a quick tomato and onion masala while staying slightly crisp at the edges. It's a favorite weekday breakfast in many Indian homes because it needs no roasting and is ready in about 20 minutes.

Method
- Cut the bread into bite-size cubes. Slightly dry, day-old bread works best.
- Heat the ghee or oil in the pan and add the mustard seeds. When they splutter, add the urad dal and chana dal and fry until golden.
- Add the curry leaves, green chilies, ginger and onion. Sauté for about 3 minutes, until the onion is soft.
- Add the tomatoes, turmeric, chili powder and salt. Cook for 3–4 minutes, until the tomatoes are soft.
- Add the bread cubes, sprinkle the water over them and toss gently for 2 minutes, until every cube is coated.
- Turn off the heat, add the lemon juice and coriander and serve right away, while the bread is still a little crisp.
Tips
- Use bread that is a day or two old. Fresh, soft bread turns mushy.
- Sprinkle the water lightly. You want the bread moist, not soggy.
Serve with
A cup of masala chai or filter coffee.
