Broken wheat upma (dalia upma)
Broken wheat, known as dalia in Hindi and godhuma rava in South India, is whole wheat cracked into small pieces. It keeps more of the grain's bran than regular semolina, so this upma is more filling and has a pleasant, nutty bite. Roasting it first adds flavor and keeps the grains separate.

Ingredients

Method
- Dry-roast the broken wheat in a pan on medium heat for 4–5 minutes, until it smells toasty. Transfer to a plate.
- Heat the ghee or oil in the pan and add the mustard seeds. When they splutter, add the urad dal and chana dal and fry until golden.
- Add the curry leaves, green chilies, ginger and onion. Sauté for about 3 minutes, until the onion is soft.
- Add the tomato, carrot and peas and cook for 3–4 minutes.
- Pour in the water, add salt and bring to a rolling boil.
- Add the roasted broken wheat, stir well, cover and cook on low heat for 12–15 minutes, until soft and the water is absorbed.
- Turn off the heat and rest for 5 minutes, then stir in the lemon juice and coriander and serve.
Tips
- For a softer texture, add ½ cup more water and cook 5 minutes longer.
- You can also cook it in a pressure cooker: 2 whistles on medium heat.
Serve with
Coconut chutney or tomato chutney.
