Rice rava upma (arisi upma)
Rice upma is a traditional favorite in Tamil Nadu and Karnataka, where it is called arisi upma and akki tari uppittu. Coarse rice rava is cooked slowly with coconut, dried red chilies and curry leaves until soft and fluffy. Store-bought rice rava or idli rava both work well.

Method
- Heat the ghee or oil in a heavy pan and add the mustard seeds. When they splutter, add the urad dal, chana dal and red chilies and fry until the dals turn golden.
- Add the curry leaves and ginger and sauté for a few seconds.
- Pour in the water, add the salt and coconut and bring to a boil.
- Lower the heat and add the rice rava slowly, stirring all the time so no lumps form.
- Cover and cook on the lowest heat for 15–20 minutes, stirring every few minutes, until the rava is soft and fluffy.
- Turn off the heat, rest covered for 5 minutes and serve hot.
Tips
- Stir every few minutes while it cooks so the bottom doesn't stick.
- A spoon of ghee stirred in at the end makes it extra soft.
Serve with
Coconut chutney, or sambar for a heartier meal.
