Idli upma (leftover idli upma)
Idli upma is how many South Indian families use up yesterday's idlis. The idlis are crumbled and tossed in a classic tempering, turning them into a light, fluffy dish that tastes completely different from plain idli. It takes about 20 minutes and needs just a few pantry ingredients.

Method
- Crumble the idlis with your fingers into coarse crumbs. Cold idlis from the fridge crumble most easily.
- Heat the ghee or oil in the pan and add the mustard seeds. When they splutter, add the urad dal and chana dal and fry until golden.
- Add the curry leaves, green chilies, ginger and onion. Sauté for about 3 minutes, until the onion is soft.
- Add the turmeric and the crumbled idlis, add a little salt and mix gently on low heat for 3–4 minutes, until heated through.
- Stir in the coconut (if using), lemon juice and coriander. Serve hot.
Tips
- Crumble the idlis while they are cold. Warm idlis turn pasty.
- Taste before adding salt, since the idlis are already salted.
Serve with
Coconut chutney, or a spoon of podi (spice powder) mixed with ghee.
